Bourbon & Butcher

George Pesek, owner of popular Mishawaka restaurants Corndance and Evil Czech Brewery and Public House, recently opened an innovative new butcher shop and lunch counter, Bourbon & Butcher.

The new shop will bring Corndance’s highly successful dry aged beef program to a wider audience, offering retail meat purchases from 11am to 10pm Monday to Saturday. In addition to the house-aged steaks, Bourbon & Butcher will feature handmade sausages, locally sourced pork, Corndance Steak Sauce, Cakes in a Can, and other delicacies.

From 11am-3pm, the cozy space off Corndance’s side bar will serve lunch, with a menu highlighting sausages, sandwiches, burgers, salads, flatbreads, handcrafted charcuterie, and specialty fries.
